Christmas plum cake is also known as a fruit cake because the cake is fully loaded with dry fruits, tutti frutti, berries and fresh fruit juice. I have added fresh orange juice you can replace apple juice. And can add other dried fruits like apricots, pine nuts and various berries. The amount of fruits and what type you want to use is entirely up to you.

Ingredients
Ingredients for plum cake:
Soaking dryfruits:
  • Chopped cherries – 9
  • Chopped dates – 11
  • Tutti frutti – 1/2 cup
  • Raisins – 1/4 cup
  • Chopped dry dates – 4
  • Orange juice – 1 glass
  • Grated jaggery – 1 cup
For batter:
  • Milkmaid – 1/4 tin
  • Lemon juice – 1 spoon
  • Rose white – 3 drops
  • Oil – 1/4 cup
  • Plain flour(maida) – 2 cups
  • Baking powder – 1 tablespoon
  • Baking soda – 1 tea spoon
  • Salt – 3 pinches
  • Cinnamon powder(chakka) – 1/4 teaspoon
  • Chopped cashew nuts(kaju) – 1/4 cup
  • Chopped almonds(badam) – 1/4 cup
  • Chopped pistachio – 1/4 cup
  • Chopped walnuts(akroat) – 1/4 cup
  • Beaten curd – 1/4 cup
Toppings:
  • Chopped cherries – 1 tablespoon
  • Tutti frutti – 1 tablespoon
  • Dry fruits – 3 tablespoons
Instructions
Procedure for plum cake recipe:
Soaking dry fruits:
  1. Take a bowl to add 9 chopped cherries, 11 chopped dates, and 1/2 cup of tutti frutti.

  2. Also, add 1/4 cup of raisins and 4 chopped dry dates.

  3. Pour a glass of orange juice and mix.

  4. Add a cup of grated jaggery and mix well.

  5. Cover and soak for 2 hours.

Making batter:
  1. Add 1/4 tin of milkmaid or milk powder.

  2. Squeeze 1/2 lemon which is approximately a spoon of juice.

  3. Add 3 drops of rose white and mix well.

  4. Add 1/4 cup of oil mix well.

  5. Sieve 2 cups of plain flour(maida) and 1 tablespoon of baking powder.

  6. Also sieve 1 teaspoon of baking soda, 3 pinches of salt and 1/4 spoon of cinnamon powder.

  7. Mix well without lumps and make a smooth batter.

  8. Add 1/4 cup of cashew nuts(Kaju) and 1/4 cup of chopped almonds(badam).

  9. Add 1/4 cup of chopped pistachio(pista), and chopped walnuts(akroat) mix.

  10. Add 1/4 cup of beaten curd and mix well.

  11. The batter is ready.

Baking cake without oven:
  1. Grease the cake tin with oil and dust with flour.

  2. Transfer the batter to the cake mould.

  3. Tap the pan twice in order to remove the air bubbles.

  4. Heat a pan and add a cup of salt/sand.

  5. Place the stand to elevate the height. Place the cake mould.

  6. Top with dry fruits, tutti frutti and cherries.

  7. Cover the lid and cook for 50-60 minutes.

  8. Insert the toothpick or knife and check whether it is clear or not.

  9. If it is done let it cool completely.

  10. Clear the sides and transfer to a serving plate.

  11. Cut into slices and enjoy this plum cake.

Step-by-step procedure for plum cake recipe:

Soaking dry fruits:

Take a bowl to add 9 chopped cherries, 11 chopped dates, and 1/2 cup of tutti frutti.

Also, add 1/4 cup of raisins and 4 chopped dry dates.

Prefer to rinse dry fruits in water and then drain them very well. This is optional.

Pour a glass of orange juice and mix. Can also add apple juice instead of orange juice.

Add a cup of grated jaggery and mix well.

Cover and soak for 2 hours. Refrigerate and soaking the dry fruits overnight helps to plump them up and juicy.

Making batter:

Add 1/4 tin of milkmaid or milk powder.

Squeeze 1/2 lemon which is approximately a spoon of juice.

Add 3 drops of rose white and mix well.

Add 1/4 cup of oil approx 6 tablespoon mix well.

Sieve 2 cups of plain flour(maida) and 1 tablespoon of baking powder.

Also sieve 1 teaspoon of baking soda, 3-4 pinches of salt and 1/4 spoon of cinnamon powder(chakka).

Mix well without lumps and make a smooth batter.

Add 1/4 cup of cashew nuts(Kaju) and 1/4 cup of chopped almonds(badam).

Add 1/4 cup of chopped pistachio(pista), and chopped walnuts(akroat) mix.

Can soak all dry fruits or mix them later.

Add 1/4 cup of beaten curd and mix well.

The batter is ready.

Baking cake without oven:

Grease the cake tin with oil and dust with flour.

Transfer the batter to the cake mould.

Tap the pan twice in order to remove the air bubbles.

Heat a pan and add a cup of salt/sand. Place the stand to elevate the height.

Place the cake mould. Top with dry fruits, tutti frutti and cherries.

Cover the lid and cook for 50-60 minutes.

Insert the toothpick or knife and check whether it is clear or not.

In case you remove the cake and find it has not been fully baked simply return the tin and cook for 5-10 minutes. A knife or toothpick will be clear and dry if the cake is properly baked.

If it is done let it cool completely.

Clear the sides and transfer to a serving plate.

Cut into slices and enjoy this plum cake.
