Nankhatai biscuit is an eggless homemade cookies without oven and a tea time snack recipe. A crispy and crunchy wheat aata cookies topped with almonds gives a delicious taste. The word ‘naan’ means bread and ‘khatai’ means biscuits. The detailed step by step procedure with full video recipe.

To prepare wheat aata cookies. Firstly, preheat the pan, whisk sugar, oil and ghee. Finally, add wheat flour mix well, bring the flour together to form a soft dough. Shape the dough and carefully place on the preheated pan. Bake for 15-20 minutes. Switch off the fire, let it cool completely. Store in an airtight container and serve for 3 weeks.

Tips for perfect wheat cookies:

  • Extra oil will spoil the dough.
  • Do not knead the dough. Just make it soft without lumps.
  • Carefully place the cookie dough plate in the preheated pan. Else, it will burn your hands.
  • Break the biscuit and check whether it is cooked or not.
  • If not, cook for another 5 minutes.
  • Do not over cook it will burn to brownish and changes the taste.
  • Let it cool completely so that you can pick the biscuits easily without breaking.
  • Store in an airtight container and can serve for 3 weeks.
  • Can also add besan or suji for extra crispy as per your taste.
  • Can use unsalted butter or pure ghee for a rich taste.

Ingredients for nankhatai biscuit:
  • sugar – 1 cup
  • cardamom – 3
  • ghee – 1 spoon
  • oil – 2 cups
  • wheat flour – 2 cups
  • baking soda – 1/4 spoon
For topping:
  • halved almonds – 1/4 cup
Instructions
Procedure for nankhatai biscuit recipe:
Preheat the pan:
  1. Heat a pan over a low flame. Add salt or sand.

  2. Palce the stand or ring cutter to elevate height.

  3. Cover the lid and preheat for 10 minutes.

preparing soft dough:
  1. Take the blender jar add a cup of sugar and 3 cardamom.

  2. Blend to a fine powder.

  3. Transfer the sugar powder into a bowl.

  4. Add a spoon of ghee.

  5. Add 1/2 cup of oil whisk well.

  6. Gradually add oil and whisk until the sugar turns creamy.

  7. Add a cup of wheat flour mix.

  8. Add another cup of wheat flour and 1/4 spoon of baking soda mix well all of them.

  9. Add little by little oil and bring the flour together forming soft dough.

  10. Do not knead the dough. Just make it soft without lumps.

Shaping the dough:
  1. Grease the plate with a spoon of oil.

  2. Place the plate and side by side.

  3. Take a small portion of dough roll and make ball shape.

  4. Slightly flatten and press at the centre. Shape as half moon or as required shape.

  5. Cookie dough in the plate giving space between each dough.

How to bake cookies in the pan:
  1. Carefully place the cookie dough plate in the preheated pan.

  2. Top with almonds or chopped cashew nuts slightly press.

  3. Cover the lid and cook for 15-20 minutes.

  4. Cookie will become cooked. Switch off the fire. let it cool completely.

  5. Crispy and crunchy aata biscuits is ready to serve.

  6. Store in an airtight container and can serve for 3 weeks.
