All about Chicken Tangri Kebab is first, the taste of chicken completely depends on grilling the chicken. I have grilled the chicken in 2 ways. In the pan, until the chicken drumsticks are completely cooked and turn golden. But for tandoori tangdi kabab, fry 1/4 of the chicken in the pan and hold the drumstick, place on the grill stand, flip and fry on both sides until golden brown spots appear.

To make the kabab more delicious I have prepared a special tangdi masala that enhances the taste. I always prefer fresh tangdi masala and homemade ginger and garlic paste to make restaurant-style kababs. Marinating chicken is another important step. Not only 4 hours as long as Overnight marination helps to cook the chicken fastly and perfect.

Tips for a perfect chicken tangdi kabab:

  • Dry roast the masala spices just for a minute or less. Overroasting changes the actual taste.
  • Make sure before marinating, there is no excess water in the drumsticks.
  • Do not forget to make slits that help to cook the chicken evenly.
  • Not only 4 hours as long as Overnight marination helps to cook the chicken fastly and perfect.
  • While grilling chicken drumsticks in the pan, fry them over a low flame until they turn golden brown.
  • For tandoor tangdi kabab, just fry 1/4 of chicken drumsticks over a medium flame.
  • And then place them in the grill stand and fire until the chicken turns golden brown.
  • Preheat the oven to 460F or 240C for at least 20 minutes.
  • Place the foil and marinated chicken, and grill for 15 minutes depending on the size of the chicken drumstick.
  • Remove from oven and brush butter or oil.
  • Serve the tasty tandoor chicken tangdi kabab recipe with green chutney.

Ingredients
Ingredients for chicken tangdi kabab:
For tangdi masala:
  • Corainder seeds – 1/2 teaspoon
  • Cumin seeds – 1/2 teaspoon
  • Cardamoms – 7
  • Cloves – 10
  • Cinnaomn sticks – 4
  • Black pepper – 1/2 teaspoon
  • Fenugreek leaves – 1/2 teaspoon
  • Red chillies – 10
For marination:
  • Clened chicken drumsticks – 4
  • Lemon juice – 1 tablespoon
  • Salt – 1/2 teaspoon
  • Turmeric – 1/4 teaspoon
  • Red chilli powder – 1/2 teaspoon
  • Ginger and garlic paste – 1 1/2 tablespoons
  • Ghee – 1 teaspoon
  • Hung curd – 1 1/2 tablespoons
For grill:
  • Butter/oil/ghee – 2 tablespoons
For garnish:
  • Onion slices – 1/2 cup
  • Lemon wedges – 4
Instructions
Procedure for chicken tandgi kabab:
Making tangdi masala:
  1. Heat a pan to add 1/2 teaspoon of coriander seeds, 1/2 teaspoon of cumin seeds and 7 cardamoms.

  2. Also add 10 cloves, 4 cinnamon sticks, 1/2 teaspoon of black pepper, 1/2 teaspoon fenugreek leaves and 10 red chillies.

  3. Dry roast for a minute. Let it cool.

  4. Transfer into a blender.

  5. Blend to a smooth powder and set aside.

Marinating chicken:
  1. Take a bowl add 4 cleaned chicken drumsticks and make slits.

  2. Add 1 tablespoon of lemon juice, 1/2 teaspoon of salt and 1/4 teaspoon of turmeric.

  3. Add 1/2 teaspoon of red chilli powder and blended fresh tangdi masala.

  4. Add 1/1/2 tablespoon of ginger and garlic paste, a teaspoon of ghee and 1 1/2 tablespoons of hung curd.

  5. Mix until the masala is well coated to chicken pieces.

  6. Take into a plate and make sure there is a distance between each chicken piece.

  7. Cover and marinate for 4 hours or refrigerate overnight.

Chicken tangdi kabab in a pan:
  1. Heat a pan over medium flame and add 2 tablespoons of butter/ghee/oil.

  2. Place the marinated chicken drumsticks.

  3. Fry over a medium flame until it turns golden.

  4. Flip on another side. Fry until it turns golden.

  5. Flip and fry until the chicken is cooked completely.

How to grill chicken tandoor tangdi kabab on the stove:
  1. For tandoor, just fry 1/4 of the chicken drumstick in the pan.

  2. Hold the chicken drumstick, and place it on a grill stand.

  3. Grill the chicken over a low fire.

  4. Flip and fire until it gets brown spots.

  5. Be careful and stay a step backwards until you complete the grilling process.

  6. Chicken tangdi kabab is ready.

  7. Garnish with lemon wedges and serve hot kabab.

Step-by-step procedure for chicken tandgi kabab:

Making tangdi masala:

Heat a pan over medium flame and add 2 tablespoons of butter/ghee/oil.

Place the marinated chicken drumsticks.

Fry over a medium flame until it turns golden.

Flip on another side. Fry until it turns golden.

Flip and fry until the chicken is cooked completely.

How to grill chicken tandoor tangdi kabab on the stove:

For tandoor, just fry 1/4 of the chicken drumstick in the pan.

Hold the chicken drumstick, and place it on a grill stand.

Grill the chicken over a low fire.

Flip and fire until it gets brown spots.

Be careful and stay a step backwards until you complete the grilling process.

Chicken tangdi kabab in the oven:

Preheat the oven to 460F or 240C for at least 20 minutes.

Meanwhile, in the baking tray place the foil.

Place the marinated chicken, and grill for 15 minutes depending on the size of the chicken drumstick.

Once done let it set for 3-4 minutes.

Remove from oven and brush butter or oil.

Take into a serving tray.

Chicken tangdi kabab is ready.

Garnish with lemon wedges and serve hot kabab.
