Mutton Liver Fry is a tasty side dish coated with masala spices. The soft texture of the mutton liver gives a wonderful taste.
- Mutton liver – 250 g
- Ginger and garlic paste – 1 1/2 spoon
- Diced onion – 1
- Diced tomato – 1
- Slit green chili – 1
- Oil – 4 spoons
- Salt – 1 spoon
- Water – 1/2 glass
- Chopped coriander leaves – 1/4 cup
- Red chili powder – 1 spoon
- Turmeric powder – 1/4 spoon
- Garam masala powder – 1 spoon

Wash mutton liver pieces thoroughly, drain and set aside.

Take a pressure cooker to add mutton liver pieces, a spoon of ginger and garlic paste, 14 spoon of turmeric powder and a spoon of red chilli powder.

Add 1 diced tomato, 1 diced onion, slit green chilli mix well.

Add a spoon of oil mix well.

Pour 1/2 glass of water mix well all of them.

Close the lid and pressure cook for 6 whistles.

Wait for a minute until the pressure goes.

Carefully open the lid and check whether the liver is cooked or not. Set aside.

Heat a pan over a medium flame add 3-4 spoons of oil.

Add pressure cooked liver masala with water mix well.

Stir and fry until the water in liver masala dry completely.

Add chopped coriander leaves mix well. Switch off the fire.

Take the delicious mutton liver fry into a serving bowl.

Garnish with chopped coriander leaves.

Serve as a side dish with biryani, rice, roti evevn with chapati, parata
Do not over cook, the liver will become hard.

Adding onion, and tomato to liver fry gives a rich taste. Can also add a spoonful of dry coconut paste if available for a thick masala fry, even you can mix this masala in plain rice. This is optional. Do not overcook the liver will become hard.
