  • Homemade fresh coriander, cumin and garam masala powder for tasty red chicken.
  • Marinating the chicken for at least 2-3 hours is crucial to allow the spices to penetrate and tenderize the meat.
  • Use Kashmiri red chili powder for its distinctive red color. This chili variety imparts color without excessive heat.
  • Fried onions contribute to the gravy’s thickness and flavor. Fry the onions slowly over medium-low heat until they are golden brown and crisp
  • Almond and cashew pastes add richness and thickness to the gravy. Ensure the nuts are ground into a fine paste.
  • The “dum” cooking method (slow cooking over low heat) is essential for tender chicken and well-blended flavors.

Ingredients for red chicken recipe:
For blending:
  • Cashew nuts – 7
  • Almonds – 7
  • Chopped tomatoes – 1/3 cup
For marination:
  • Cleaned chicken pieces – 750 g
  • Ginger and garlic paste – 2 tablespoons
  • Chopped green chilli – 1
  • Beaten curd – 1 cup
  • Salt – 1/2 teaspoon
  • Coriander powder – 1 tablespoon
  • Cumin powder – 1 tablespoon
  • Garam masala powder – 1 tablespoon
  • Turmeric – 2 pinches
  • Red chilli powder – 1 tablespoon
  • Tomato sauce – 1 tablespoon
  • Green chilli powder – 2 tablespoons
  • Ghee – 2 tablespoons
  • Red orange food colour – 4 pinches
For cooking chicken:
  • Oil – 1/4 cup
  • Onion slices – 1 cup
  • Cashew nuts – 6
  • Chopped coriander leaves – 1/4 cup
Instructions
Procedure for red chicken recipe:
Cashew nut & tomato paste:
  1. In a blender, add 7 cashew nuts, 7 almonds, and 1/3 cup of chopped tomatoes. Blend smooth and set aside.

Marinating Chicken:
  1. Take a bowl add 750 g of cleaned chicken pieces, 2 tablespoons of ginger and garlic paste.
  2. Add 1 chopped green chilli, 1 cup of beaten curd, blended cashew nut and tomato paste.
  3. Add 1/2 teaspoon of salt, 1 tablespoon of coriander powder, 1 tablespoon of cumin powder, 1 tablespoon of garam masala powder.
  4. Add 2 pinches of turmeric, 1 tablespoon of red chilli powder, 1 tablespoon of tomato sauce
  5. Add 2 tablespoons of green chilli sauce, 2 tablespoons of ghee and 4 pinches of food colour.
  6. Mix all the ingredients well until coated with chicken pieces.
  7. Cover and marinate for at least 1 hour.
Cooking Chicken:
  1. Heat a pan over a medium flame add 1/4 cup of oil and add a cup of onion slices.
  2. Fry until the onions turns golden brown colour.
  3. Add marinated chicken fry for 2 minutes over a high flame.
  4. Know reduce the flame to low and cook the chicken.
  5. In a slow flame, cook until the chicken becomes soft and the gravy thickens.
  6. Add 6 cashew nuts and 1/4 cup of chopped coriander leaves mix well.
  7. Cook until the oil gets separated and the gravy thickens.
  8. Our red chicken recipe is ready take into a serving bowl.
  9. Serve with roti, naan, or rice and enjoy the flavour and taste of dish.
