The Mutton fry recipe is a simple and flavourful Andhra-style Mutton recipe that can enjoy with roti and rice. Mutton fry can be served as a main dish or as a side dish and is often served as part of a thali.

To fry mutton in easy steps. The first step is to wash and drain the mutton mix well all the ingredients and pressure cook for 6 whistles. Check whether the mutton is cooked or not. If not cooked pressure, cook, for 2 more whistles. The second step is to heat oil in a pan add cooked mutton with stock and fry.

If you prefer some gravy in the mutton recipe, switch off the flame before the gravy dries. For dry mutton stir continuously at low flame until the masala in the mutton dries completely. Prefer homemade garam masala powder for a better taste.

A simple Andhra style mutton fry goes with chapati, rice, rumali rotibiryani or as a side dish with any meal. Just mix all the ingredients pressure cook and simply fry.

Ingredients
Ingredients for mutton dry fry:
For pressure cooking mutton:
  • mutton pieces – 1/4 kg
  • chopped onion – 1
  • slit green chilies – 2
  • chopped tomato – 1
  • ginger and garlic paste – 1 spoon
  • turmeric powder – 1/4 spoon
  • red chili powder – 1 spoon
  • garam masala powder – 1 1/2 spoon
  • oil – 1 spoon
  • water – 1 1/2 spoon
For fry:
  • oil – 3 spoons
  • bay leaf – 1
  • star anise – 1
Instructions
How to fry mutton:

Pressure cooking mutton:

  1. Take a pressure cooker add cleaned and drained mutton pieces, chopped onion, slit green chilies.

  2. Add one chopped tomato, a spoon of ginger and garlic paste.

  3. Add 1/4 spoon of turmeric powder, a spoon of red chili powder, 1 1/2 spoon garam masala powder.

  4. Add a spoon of oil mix well of them.

  5. Pour 1 1/2 cup of water mix well.

  6. Close the lid and pressure cook for 6 whistles according to the mutton pieces.

  7. Carefully open the lid check whether the mutton become soft or not. If not pressure cook for 2 more whistles.



Frying mutton:

  1. Heat a pan over a medium flame add 3 spoons of oil.

  2. Add pressure cooked mutton with stock mix well.

  3. Add a bay leaf and star anise mix. This is optional.

  4. If you want little gravy switch off the fire at this stage.

  5. For dry mutton stir well and fry for 5 minutes till it dry completely.

  6. Take into the serving bowl. Serve as a side dish with chapati, rice, rumali rotibiryani



Recipe Notes
  • Check whether the mutton become soft or not. If not pressure cook for 2 more whistles.
  • If you prefer little gravy in mutton, immediately switch off the fire when the gravy forms, otherwise it will dry.
  • For dry mutton stir well and fry for 5 minutes till it dry completely.

Step-by-step procedure to fry mutton:

Pressure cooking mutton:

Take a pressure cooker to add cleaned and drained mutton pieces.

Add 1 chopped onion, and 2 slit green chillies.

Add one chopped tomato, a spoon of ginger and garlic paste.

Add 1/4 spoon of turmeric powder, a spoon of red chilli powder, and 1 1/2 spoon garam masala powder.

Add a spoonful of oil mixes well them.

Pour 1 1/2 cups of water.

Close the lid and pressure cook for 6 whistles according to the mutton pieces.

Carefully open the lid.

Check whether the mutton becomes soft or not. If not pressure cooks for 2 more whistles.
