Veg cutlet is a healthy snack. The combination of boiled potatoes, spinach, grated carrots and all the spices gives a wonderful taste. If you are a big fan of vegetable cutlets and prefer homemade kebabs or cutlets, this recipe is for you. The time taken for vegetable kebabs is around 25 minutes.

To prepare veg cutlet in a simple steps dip the spinach in hot water for 2 minutes and set aside, fry all the vegetables, blend it once, add gram flour and rice flour make dough, shape cutlets and shallow fry the cutlets.

Veg cutlet is a healthy snack. If you are a big fan of vegetable homemade try these super healthy kebabs or cutlets.

Ingredients
Ingredients for veg cutlet:
  • Spinach(palak) – 1 bunch
  • Grated carrots – 1 cup
  • Boiled and mashed potato – 3
  • Chopped onions – 1
  • Chopped coriander leaves – 1 cup
  • Rice flour – 1/4 cup
  • Gram flour (besan) – 1 cup
  • chopped green chilli – 1
  • Ginger and garlic paste – 1 spoon
  • Oil – 1/4 cup
  • Salt – 1 spoon
Spice powders:
  • Red chilli powder – 1 spoon
  • Turmeric powder – 1/2 spoon
  • Garam masala powder – 1 spoon
  • Cumin powder – 1/2 spoon
  • Pepper powder – 1/4 spoon
  • Coriander powder – 1/4 spoon
Instructions
Procedure for veg cutlet:
Spinach in hot water and fry all the vegetables:
  1. Boil water and dip spinach for 2 minutes and remove from water. 

  2. Let it cool chop the spinach and set aside.

  3. Add 7 spoons of desired oil to a pan and add chopped onions, let them fry for 2 min.

  4. Add chopped green chillis, ginger and garlic paste, grated carrot mix well.

  5. Add spinach, coriander leaves, mashed potato and mix well.

  6. Add spice powders, salt, red chilli powder, turmeric powder, garam masala powder. cumin powder, pepper powder and coriander powder to the mixture and mix well

  7. Add cumin powder, pepper powder and coriander powder to the mixture and mix well

  8. Fry the mixture and take into a bowl.

Roast gram flour and make dough:
  1. Heat a pan and roast besan or gram flour for 5 minutes over a low flame

  2. Fry until it turns golden brown colour. Once turned to light brown, take them to a bowl.

  3. Grind all the fried mixture once and take the mixture in the bowl of besan.

  4. Add rice flour and mix well and make the dough.

Shaping:
  1. Apply oil on both the hands take a small lemon sized dough and shape as the cutlet.

  2. Heat a pan over a medium flame add 4-5 spoons of oil.

  3. Shallow fry the cutlets till they turn golden brown.

  4. Take the veg cutlets into a serving plate. Serve hot and enjoy.

Recipe Notes
  • Make sure you do not fry them on high flame as it spoils the base of Kebab and will not cook.

Procedure for veg cutlet:

 Spinach in hot water and fry all the vegetables:

The ingredients required for vegetable kabab recipe.

Boil water and dip spinach for 2 minutes.

Remove from water.

Let it cool chop the spinach and set aside.

Add 7 spoons of desired oil to a pan over a medium flame.

Add chopped onions, let them fry for 2 min.

Add chopped green chillis, ginger and garlic paste. Fry till the raw smell disappears.

Add grated carrot mix well.

Add chopped spinach mix well.

Add chopped coriander leaves mix well.

Add boiled and mashed potato.

Mix well fry all the vegetables.

Add salt and all the spice powders, red chilli powder, turmeric powder, garam masala powder, cumin powder, pepper powder and coriander powder.

Mix well all the spice powders and veggies.

Fry the all the mixture for a minute.

Take all the fried mixture into a bowl. Let it cool for a minute set aside. Meanwhile, roast the gram flour.

Roast gram flour and make dough: 

Heat a pan over a low flame add a cup of gram flour.

Roast gram flour for 5 minutes until it turns golden brown colour. Once turned to light brown, take them to a bowl. set aside.

Blending:

Take all the fried mixture into a blender jar.

Grind the fried mixture once and take all the mixture in the bowl of roasted besan flour.

Add rice flour and mix well make the dough.

Shaping:

Apply oil on both the hands take a small lemon sized dough and shape as a cutlet.

Heat a pan over a medium flame add 4-5 spoons of oil.

Shallow fry the cutlets.

Turn on another side and fry till they turn golden brown. Make sure you do not fry them on high flame as it spoils the base of Kebab and will not cook.

Take into a serving plate. Serve hot veg cutlets with mint or coriander chutney or toamto sauce.
