This kulfi boasts a smooth and slightly dense texture, characteristic of traditional kulfi. The ripe mango provides a burst of tropical sweetness, beautifully balanced by the mild tanginess of the curd. The sugar enhances the mango’s natural flavors without overpowering them. The resulting kulfi is a vibrant yellow-orange, a visual treat that promises a delightful taste experience. It’s a refreshing alternative to ice cream and a wonderful way to savor the seasonal mangoes.

Tips for a perfect mango kulfi recipe:

  • Use Ripe and Sweet Mangoes: The quality of mangoes will significantly impact the flavour. Opt for ripe and sweet mangoes.
  • Smooth Mango Puree: Blend the mango flesh, curd and sugar until you have a smooth, lump-free puree. This will contribute to a creamy kulfi.
  • Taste and Adjust Sweetness: Before freezing, taste the mixture and adjust the sugar according to your preference and the sweetness of the mangoes.
  • Proper Freezing: Pour the mixture into kulfi moulds, small cups, or even an ice cube tray. Cover them tightly with aluminium foil or cling film to prevent ice crystal formation.
  • Patience is Key: Allow the kulfi to freeze for at least 6-8 hours or preferably overnight for a firm set.
  • Unmolding: To easily unmold the kulfi, briefly dip the bottom of the mould in lukewarm water for a few seconds. You can also gently roll the mould between your palms.
  • Garnish: For an extra touch, garnish the kulfi with chopped nuts like pistachios or almonds before serving.
