For barley slurry:

  • Barley powder(jau) - 3 tablespoons
  • Water - 1/2 glass

For cooking veggies:

  • Oil - 2 tablespoons
  • Chopped onions - 1/4 cup
  • Finely chopped ginger - 1 tablespoon
  • Finely chopped garlic - 1 tablespoon
  • Chopped carrot - 1/4 cup
  • Sweet corn - 1/4 cup
  • Chopped capsicum - 1/4 cup
  • Water - 1 glass
  • Salt - 1/2 teaspoon as required
  • Crushed pepper - 1/2 teaspoon
  • Chopped coriander leaves - 1/4 cup
  • Lemon juice - 1 teaspoon

Instructions

Procedure for vegetable barley soup recipe:

Barley slurry:

  1. Take a bowl, add 3 tablespoons of barley powder and 1/2 glass of water.

  2. Mix well without lumps and set aside.

Frying veggies:

  1. Heat the pan over a medium flame, add 2 tablespoons of oil.
  2. Add 1/4 cup of chopped onions, 1 tablespoon of finely chopped ginger, and 1 tablespoon of garlic.
  3. Also add 1/4 cup of carrot, 1/4 cup of sweet corn and 1/4 cup of capsicum.
  4. Stir and fry for 2 minutes.

Cooking veggies:

  1. Pour 1 glass of water, add 1/2 teaspoon of salt, 1/2 teaspoon of crushed pepper and 1/4 cup of chopped coriander leaves and boil.
  2. Mix the barley slurry before adding it to the pan.

Soup consistency:

  1. Mix well immediately to avoid lumps.
  2. Finally, add 1 teaspoon of lemon juice.
  3. At medium-thick consistency, switch off the fire.
  4. Take it into a serving bowl and enjoy this tasty and healthy barley soup.

  • Use homemade barley powder and fresh vegetables for the best flavor and nutrient content.
  • If the soup is too thick, add a little more water. If it’s too thin, you can simmer it uncovered for a bit longer to allow some of the liquid to evaporate
