Mint rice is the best lunch box recipe for a quick morning, It’s made by a bowl of cooked rice with a fragrant paste of fresh mint leaves, along with spices also known as Pudina rice

Ingredients

Ingredients for mint rice:

For blending:

  • Ginger - 5 g
  • Garlic - 9
  • Green chillis - 6
  • Mint leaves(pudina) - 2 cups
  • Water - 2 tablespoons

For tempering:

  • Oil - 3 tablespoons
  • Tempering seeds - 1 taablespoon
  • Red chillies - 3
  • Chopped onion - 1
  • Curry leaves - 1 spring

Rice and spices:

  • Turmeric - 1/4 teaspoon
  • Salt - 1 teaspoon(as required)
  • Cooked rice - 250 g

For garnish and pack:

  • Fried peanuts - 1 tablespoon
  • Fried almonds - 1tablespoon
  • Lemon juice - 1 tablespoon

Instructions

Procedure for mint rice recipe:

Make mint paste:

  1. Take a blender and add a piece of 5 g of ginger and 9 cloves.
  2. Add 6 green chillies, 2 cups of fresh mint leaves and 2 tablespoons of water.
  3. Blend smooth and set aside

Tempering:

  1. Heat the pan over a medium flame.

  2. Add 3 tablespoons of oil, and 1 tablespoon of tempering seeds.

  3. Also add 3 red chillies, one chopped onion and a spring of curry leaves.

  4. Stir and let them splutter.

  5. Add blended mint mixture stir and fry for 2 minutes until fragrant.

  6. Add 1/4 teaspoon of turmeric and 1 teaspoon of salt and mix well.

  7. Stir and fry until the mint mixture dries a little bit.

Mixing rice:

  1. Add 250 g of cooked rice to the mint mixture.
  2. Mix until the rice and mint are thoroughly combined.

Pack lunch box:

  1. Now switch off the fire and transfer into the lunch box.
  2. Healthy tasty mint rice is ready to serve.
  3. Serve immediately or as a lunch box.
  4. Do not forget to squeeze lemon juice to store a little bit longer
  5. To make mint rice healthier add a tablespoon of fried peanuts and a tablespoon of fired almonds

Recipe Notes

For a tangy flavour or to store fresh for longer add a tablespoon of lemon juice while mixing the rice.

Mix the mint mixture with cooked or leftover rice.

Garnish with a tablespoon of fried peanuts and a tablespoon of fried almonds.
