Ingredients

Ingredients for afghani chicken:

For blending:

  • Ginger pieces - 1 tablespoon
  • Garlic cloves - 1 tablespoon
  • Green chillies - 2
  • Onion slices - 1/2 cup
  • Mint leaves - 1/4 cup
  • Coriander leaves - 1/4 cup

For marination:

  • Chicken pieces - 1/2 kg
  • Beaten curd - 1 cup
  • Fresh cream - 3/4 cup
  • Turmeric - 2 pinches
  • Red chill powder - 1 teaspoon
  • Garam masala powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Melted butter - 1 tablespoon
  • Lemon juice - 1 tablespoon

For gravy:

  • Cashew nuts kaju - 7
  • Cloves laung - 4
  • Cumin seeds jeera - 1/4 teaspoon
  • Cinnamon stick dalcheene - 1
  • Cardamom elachi - 3
  • Black pepper kale mirch - 3
  • Water - 1 cup
  • Coriander leaves dhanie ke patte - 1/2 cup

Instructions

Procedure for the afghani chicken recipe:

Blending:

  1. In a blender add 1 tablespoon of ginger pieces and 1 tablespoon of garlic cloves.
  2. Add 2 green chillies, 1/2 cup of onion slices, 1/4 cup of mint leaves and 1/4 cup of coriander leaves.
  3. Blend smooth and set aside.

Marinating chicken:

  1. Add cleaned 1/2 kg chicken pieces in a bowl.
  2. Add blended onion mixture and 1 cup of beaten curd.
  3. Also, add 3/4 cup of fresh cream.
  4. Add 2 pinches of turmeric, 1 teaspoon of red chilli powder, 1 teaspoon of garam masala powder and a teaspoon of salt.
  5. Add 1 tablespoon of melted butter and 1 tablespoon of lemon juice.
  6. Mix well until the masala is well coated to chicken pieces.
  7. Cover and marinate for at least one hour.
  8. The marinade helps tenderize the chicken and infuse it with aromatic flavours.

Afghani chicken grilled:

  1. Heat a pan over a medium flame and add 1/2 cup of oil.

  2. Add marinated chicken pieces.
  3. While traditionally Afghani Chicken is grilled in a pan, you can also bake it in the oven.
  4. Both methods result in deliciously cooked and flavorful chicken. Choose the cooking method that works best for you.
  5. Flip and fry until they turn golden brown colour.

Afghani chicken gravy:

  1. Add 7 cashew nuts, 4 cloves, 1/4 teaspoon cumin seeds, 1 cinnamon stick, 3 cardamom and 3 black pepper.
  2. Now pour the remaining gravy in marination.
  3. Stir and fry for a minute.
  4. Pour a cup of water and mix.
  5. Cover and cook over a low flame.
  6. Cook until the chicken becomes soft and the gravy thickens.
  7. Finally, sprinkle 1/2 cup of chopped cilantro.
  8. Take into a serving bowl.
  9. Afghani Chicken is versatile and pairs well with various accompaniments.
  10. You can serve it with naan bread, flavored rice, or a fresh salad to complete the meal.
