Sheer khurma | Ramazan Special Semiya Kheer in 5 minutes

A very popular sweet specially made on the occasion of Eid-Ul-Fitr. serves as a healthy breakfast recipe mixed with dates, dry fruits and milk.

Ingredients

Ingredients for sheer khurma:

  • Long cut vermicelli seviyan -1 cup(50 g)
  • Ghee - 4 tablespoons
  • Sugar - 2 tablespoons
  • Milk - 1/2 liter +(1 glass)
  • Milkmaid - 200 g(1 tin)

Dry fruits:

  • Chopped dates - 1/4 cup(seedless)
  • Chopped dry dates - 1/4 cup
  • Chopped cashew nuts - 1/4 cup
  • Chopped almonds - 1/4 cup
  • Raisins - 1/4 cup
  • Chopped pistachio -1/4 cup
  • Saffron strands - few

Instructions

Procedure for sheer khurma recipe:

Frying dry fruits:

  1. Heat a pan over medium flame and add 2 1/2 spoons of ghee.

  2. Add 1/4 cup of chopped cashew nuts, 1/4 cup of dry dates, 1/4 cup of pistachio, 1/4 cup of seedless dates, 1/ 4 cup of almonds and 1/4 cup of raisins.

  3. Fry until they turn golden in colour and set aside.

Roasting vermicelli seviyan:

  1. Take a cup of long-cut vermicelli seviyan(approx 50 g).

  2. Do not break the seviyan into pieces.

  3. Heat 1 1/2 tablespoons of ghee.

  4. Add seviyan and roast until it turns golden and set aside.

How to make sheer khurma: 

  1. Heat a pan over medium flame and pour 1/2 litre milk.

  2. Boil the milk reduce the flame and mix well.

  3. Add a few saffron strands and mix.

  4. Boil milk for 2 minutes and add 3 crushed cardamoms.

  5. Add roasted seviyan mix well and cook for a minute.

  6. Add fried dry fruits and 200 g milkmaid and mix well.

  7. Scrap the sides and mix well.

Servings:

  1. Add 2 tablespoons of sugar,  pour a glass of boiled milk and mix.

  2. Adjust the milk according to the consistency of sheer khurma also adjust the sugar.

  3. Delicious sheer khurma is ready.

  4. Take into a serving bowl and garnish with dry fruits.

  5. Serve immediately or refrigerate and can serve later.

  6. Enjoy Ramadan’s special sheer khurma. 

Recipe Notes

  • Prefer long-cut vermicelli seviyan(approx 50 g).
  • Do not break the seviyan into pieces.
  • Fold and roast in order to avoid breaking.
  • Before adding milk wet the pan once to avoid sticking.
  • No need to cook seviyan for a long time.
  • Adjust the milk according to the consistency of sheer khurma.
  • Personally, I love sheer khurma in a thick consistency.
  • You may adjust the sugar and milk to your taste.
  • Sheer khurma thickens when it cools.
  • Serve immediately or refrigerate and can serve later.
  • When you refrigerate sheer khurma add hot or cold milk before serving.
