Wheat cake is a smooth and sponge cake, no egg, no oven, no sugar, no maida, no butter and no beater. These eggless whole wheat atta cake is made with wheat flour, jaggery and dry fruits for a healthy and rich taste.
Heat a pan over low flame add salt or sand.
Place the stand or ring cutter or any other object, just to elevate height.
Close the lid and preheat the pan for 10 minutes.
Take the cake tin or cake mould apply a spoon of oil or butter.
Dust with a spoon of wheat flour and remove the excess flour.
Take a bowl add 1/2 cup of oil.
Add 3/4 cup of jaggery whisk well.
Add 1/2 cup of curd whisk well until the jaggery dissolves.
Whisk well to make a smooth and creamy texture.
Sieve wheat flour, baking powder, baking soda, salt.
Make sure there is no lumps.
Mix well in one direction or cut and fold method.
Gradually pour milk to make a smooth batter.
Make a thick batter.
chop the dates and cashew nuts.
Mix a spoon of wheat flour, chopped dates, cashew nuts, raisins and crushed cardamom. This is optional.
Add dry fruits to the batter mix well.
Pour milk according to the consistency of thickness of batter.
Battery is ready. Transfer into the cake tin.
Pat the tin twice to remove air bubbles.
Place the cake tin in a preheated pan or oven.
Top with dates, cashew nuts and raisins.
Cover the lid and bake for 40-50 minutes.
Insert the toothpick and check whether it is clear or not.
If toothpick is not clear, bake for another 10 minutes.
Switch off the fire. Let it cool completely.
Clear the sides with the help of knife.
Take into a serving plate.
