Curd rice is a quick meal that comforts the stomach and is the ending meal of south Indians which is the best dish for summer. The curd is also a natural fire extinguisher after a very spicy meal. A small cup of curd will keep those spice tears away. Homemade healthy and comfortable curd rice recipe.

Ingredients

Ingredients for curd rice:

  • Oil - 2 tablespoons
  • Tempering seeds - 1 tablespoon
  • Chopped green chillies -2
  • Curry leaves - 1 spring
  • Grated carrot - 1/4 cup
  • Chopped ginger - 1 tablespoon
  • Chopped corainder leaves - 1/4 cup
  • Salt - as required
  • Curd - 1 cup
  • Boiled rice - 3 cups

Instructions

Procedure for curd rice recipe:

Tempering:

  1. Heat a pan and add oil next to add tempering seeds. When it starts crackling.

  2. Add chopped green chilli and curry leaves.

  3. Add grated carrots, chopped ginger and coriander leaves.

  4. Stir well and fry for 2 min until the carrot gets sauteed.

How to make curd rice recipe:

  1. Add the tempering mixture into the rice bowl.

  2. Mix well both the tempering mixture and boiled rice together.

  3. Add salt, curd and if necessary pour little water and mix well.

  4. Adjust water and salt according to your taste.

  5. Better serve chilled curd rice and enjoy.

  6. Can serve at room temperature also.

  7. The chilled curd protects from dehydration in summer.

  8. Garnish with chopped carrot and coriander leaves and enjoy.

Recipe Notes

  • Mash the rice before mixing the curd.
  • Curd rice can also serve with pomegranate.
  • Curd rice with banana is a super food for kids.
